I make this before I go to bed and place it in a mason jar in the fridge. It is surprisingly filling and tasty, depending on what you use. I am not a big breakfast person, but if I don’t eat breakfast I am more prone to snacking. So this is perfect when I don’t feel like making breakfast in the morning (which I rarely do).

I have a bad habit of buying so-called “coffee table” books and never reading them. This one was a bit different. It takes awhile so definitely start it the day before you serve it!

Caramelized Zucchini Linguine

with Lemony Parmesan Cream Sauce

This is a delicious and easy to make recipe that we use all the time during the wee, especially when it is hot or warm outside because it is light and refreshing. This is vegetarian-safe but not vegan-friendly
